    • Its nutritional properties make it a good candidate for use as a food supplement (X. Wang et al., 2021)
    • Can be added to food to prolong its shelf life (Rathnapala et al., 2021)
    Challenges/risk factors
    • Although less allergenic than other egg white proteins, it still has potential allergenicity (Dhanapala et al., 2015)
    • Ovotransferrin is a glycoprotein. Different glycosylation patterns in non-mammalian host strains might impact the folding and function of ovotransferrin (Abeyrathne et al., 2013).
